Hot Star Large Fried Chicken is a fried chicken sensation, originating from the country of Taiwan, with beginnings from the ever so famous branch in the Shinlin Night Market in Taipei. It's classified as street food as there is no seating in the eatery and you eat standing up or on the go. If you've ever been to Taiwan, then you'll know probably know how popular the fried chicken from Hot Star is, with lines upon lines of people waiting to grab hold of their famous oversize chicken. They are well known for their 'crispy on the outside, juicy on the inside' chicken.


When I was in Taipei a few years ago, I did have the chance to visit the main branch in Shinlin Night Market. On the menu, there was only one thing and that was the large fried chicken that was as large or if not larger than one's head. Though my recollections of the night were rather faint, I do recall the line being long, filled with many tourists but it moved very quickly. The chicken was heavily spiced and then fried to utter perfection, leaving a steaming hot crispy outer crust and juicy centre. However, I can't remember whether they used breast or thigh meat.


Fast track a few years and Hot Star opened its first branch in Sydney CBD and boy was I excited. I, together with Tin Tin, had a chance to visit and get a behind the scenes tour of Hot Star, located near World Square Centre, courtesy of Hot Star and Harvey Publicity. We actually went a while back, within the first few months of opening but I haven't had a chance to write about it till today.



We visited Hot Star on a Friday night, where the weather was utterly horrible with dark clouds and the occasional sprout of rain. Still, there was a number of people queuing and waiting for their freshly fried goodies and it got busier as the time progressed.


What we noticed upon entering and heading to the back of the store was how busy it was behind the scenes and the number of staff they had working hard to deliver perfect fried snacks to hungry customers. It looked like a production line consisting of the coaters, the fryers, and the servers, most with masks, so rest assured that hygiene is decent.



The menu is simple. There are five options to choose from including the fried chicken, chicken bites, mushrooms, sweet potato and curly fries. You can purchase these as individual items or buy as part of a combo. Everything is cooked to order guaranteeing that everything is freshly fried. During busy times, you may have to end up waiting a while for items to be cooked. It is worth the wait as that means everything will taste much better. All items are deep fried and to be honest it isn't that healthy and is therefore not for the health conscious. But hey, you should treat yourself once in a while.


After speaking to the store manager, we were told that most ingredients used for their products are sourced from Taiwan with the exception of the fresh ingredients such as the chicken, mushroom and potatoes. They don't use preservatives or additives either.




The 'Large Fried Chicken ($7.90)' is available in either original or spicy, with the option of spice levels ranging from little to extra spicy. The enormous slab of breast meat, approximately 250 grams and 30 cm in length, is coated in flour and then a crumb, deep fried and then gets a final dusting of spices. Before this cooking process, the chicken is marinated for a whopping 12 hours! Yes, you read correctly. No wonder it is so tasty. After it is deep fried, it is put in a paper bag just like how it is done in Taiwan.


Resembling a schnitzel, but much extravagant and larger in size, giving it that extra zing factor. It was piping hot from the fryer and getting a bite of it proved a bit difficult. The exterior was pleasantly crunchy and the spice gave it a nice flavour hit. The chicken inside was very moist, tender and oh so juicy. As we got to try the spicy option, I didn't find it overly spicy and I would say tolerable for those chilli lovers out there but if you aren't very tolerant to chilli then the original option may be a better choice. Tin Tin found her one to be very spicy and she is one with a low tolerance to chilli.





'Sweet Potato Fries ($3.90)' is surprisingly one of my favourites. The sweet potato fries are coated in a batter and seasoned with a plum seasoning. The outside is light and crispy and the sweet potato is so sweet without the addition of any additives. I was surprised to find that the sweetness of the potatoes was all natural. I found myself wanting to eat more of this as that seasoning is just so good.



The 'Mushrooms ($4.90)' aren't your regular everyday mushrooms you get at the supermarket. They use King Oyster Mushrooms which are coated in a light batter and then fried. The insides are still firm yet delicious. I'm not sure if we received an actual serving size but the portion was quite small for the price to be paid, but then again you might be paying for the quality ingredients that are used.



The 'Chicken Bites ($5.00)' is more like the large fried chicken chopped up into smaller pieces with the addition of basil leaves giving it an aromatic smell. The chicken was a bit on the dry side and reminded me very much of the Japanese Kara-age. I much preferred the large chicken over this but it was still very nice.

Do eat carefully and watch out for the bone and cartilage! It may look boneless but there is a bone inside to maintain the flavour as they say. As the sign reads 'real chicken, real bones'. Indeed.

So how did it rate compared to Taiwan you may ask? They follow the exact concept with the addition of a few extra menu items which I find much better as there is variety. In terms of taste and texture of the fried chicken, I would say its pretty much 99% the same with the exception of the part of the chicken that is used.


If you like deep fried chicken and in gigantic portions then do give this place a try. I definitely recommend Hot Star as the food is delicious, ingredients used are fresh and it's very affordable. The only item I didn't get to try was the Curly Fries ($3.90)' and I read that was a winner so it shall be next on my agenda. They are very serious about the quality of their products and this is definitely reflected in the quality of their food. As I mentioned before, it's not very healthy but then again if it is fried then it probably isn't but from looking at the oil residue left on the paper bags, it was very minimal as most items are air dried prior to serving so that's a plus.

For those of you who have been to Cho Dumpling King in Chinatown, this is the sister restaurant. There are two Cho Express in Hurstville, one within Westfields and the other near the  railway station.

My Taiwanese uni friend first introducted me to the concept of 'boxed taiwanese lunch' meals a few weeks back and at first thought, I wasn't really interested but decided to go with the majority of the group and try it out. It took me by surprise and I actually really enjoyed the flavour combinations.

Living near Hurstville means I can actually have it more often since it so close. Though it may be unhealthy due to the amount of oil and salt they put in.

The box lunch comes with two options from a wide selection in the baine marie for $6.95 and for $1 extra, a shaken iced green/black tea is available. It's tasty and fresh. A bargain I say!

Meet Fresh

These Taiwanese dessert stores have started popping up at a few locations around Sydney. The original store in Chinatown use to have queues that went around quite a distance on Friday nights during Summer but have lessened due to this chilly Winter.


I usually get the 'Taro Balls Tofu Pudding ($5.50)' no matter which store I'm at. I like the silky, smooth tofu and the chewy taro balls that accompany it. All served with syrup and crushed ice.

If you're willing to explore, there are many other dessert and drink items on the menu.

This is my second post on Chefs Gallery but this time we were here for lunch not dinner. A new menu has been introduced recently and I knew we had to come here to try. The menu is much more elaborate with many more options and photographs to match. It makes me want to order everything as it looks way too appealing to the eyes.

Arriving a bit just after 12pm, normal seating was fully booked out and the only option available was gallery seating. I didn't mind as I've always wanted to see what the chefs were making. The only negative was the sunlight that was coming through the window which made it rather warm.


'Jasmine Tea ($1.90/pp)' is a must have drink at a Chinese restaurant. It helps wash down that after greasy taste left by the foods. Not only that, it is also refreshing and soothing. Here is it served extra hot and perfect with the food that is to come.


The 'Traditional Dan Dan Noodles with Pork Ribs ($13.90)' arrives first and I can smell the peanut fragrance. The handmade noodles and springy and al-dente. The broth is rich and spicy combined with finely minced prawns and peanuts giving it that nutty taste. The pork chops is a great addition and we finish this in no time.
 

'Prawn and Pork Wontons in a Spicy Sauce ($7.90)' is a must order. The wontons are full of flavour and the sauce is addictive. It's very similar to the one at Din Tai Fung but I prefer the one here. I ordered this last time around but I just had to order it again.


The last time we were here, plain roti wasn't available. This time around, the revised menu had 'Fluffy Plain Chinese Roti ($5.90)' which was very light and airy. I much prefer this over the roti's with filling.
 


The 'Pan Fried Daikon Radish Cakes ($5.90)' was a disappointment. Mum makes this regularly at home and I find that shredding the daikon makes a big difference to the taste of it. The Daikon has been cut into chunky bits and combined into the flour. The cake hasn't been fried enough and I find it soft. This is left to the side as I find it bland.

 
The greeeeennnn pandan sauce. How could one resist? The 'Mini Bread Rolls Fried ($4.90)' is basically mantou buns deep fried in oil and served with a creamy pandan sauce. I love fried things and anything pandan. So this is a winner for me. Condensed milk is no longer served with this dish but I'm sure you can ask for it.


I don't remember ordering 'Mixed Seafood and Tako Fritters ($8.90)' before as the picture in the menu looks different to what I had before (Seafood Rolls with Wasabi Sauce) so I order it again. Oops. The waiter takes it out and it looks and tastes like what I had last time. One word -very oily.
 

To finish off our meal, we end up with 'Silken Tofu with Ginger Tea and Goji Berry Served Hot ($5.90)'. The portion size is large and is suitable for two. I have to say that the tofu is one of the best I have eaten. It's very silky and smooth and not too soft. The ginger tea doesn't taste like tea at all but rather the usual ginger sauce you see on these desserts. The goji berry is just for decoration and has no flavour impact.
 
We find ourselves over eating and over ordering once again. An enjoyable meal.

Ni Hao! Ni Hao! Ni Hao!


Meaning Hello in Mandarin, these are the words muttered by the staff upon entry to the restaurant. It took a while to get use to and to refrain from laughing. So childish we are.



This is my second visit to Chefs Gallery within Regents Place. Many have said that their concept is simila rto that of Din Tai Fung but I defer. The menu items are extremely different and they are more known for their handmade noodles rather than the dumplings. Their food genre is Taiwanese modern and reminds me a lot of Chinese food.

My friend A hasn't been here before and requested we meet up for dinner after work so Chefs Gallery it was. T and I have been here before but have a faint memory of what we ordered last time around only remembering what we wanted to try this time around.

I made a book a day prior online and the only time slot before closing was 5:30pm, 5:45pm and 6:00pm. They open at 5:30pm and I chose the 5:45pm due to different work finishing times. On the day, a staff member advises me that we only have one hour to eat.



The 'Lychee Green Tea ($4.90) is ordered by me and it is refreshing and cool with a lychee that sits at the bottom of the glass. A has the 'Chrysanthemum, Rose Buds and Goji Berry Tea ($6.90)' which she thinks is cold but is served hot and has a light taste to it.



T has the 'Lychee and Mint Juice ($5.90)' and at first taste, she gives a disgusted look. I have a taste and all I can taste is grass and no lychee. She struggles to finish this and leaves it to the side.

Two menus are on offer include the 'Night Yum Cha' and the 'A-la-carte' and we choose the latter even though both can be ordered at the same time.



'Spinach Noodles Wok-Fried with Seafood ($17.90)' is light green in texture from the spinach and the handmade noodles are made within the premises and the thumping of the flour can be heard in the background. The flavour is just right with a hint of pepper and this is a favourite of ours. 



The next noodle dish 'Sweet and Tangy Diced Chilli Chicken Tossed with Handmade Noodles ($13.90)' is just like what the title says but instead it should be sweet and sour. The sauce reminds me of what they use in sweet and sour pork and we all find this really unusual and weird so a lot of it is left behind.



The 'Prawn and Pork Wontons in a Sichuan Spicy Sauce ($9.90)' is like an exact replica of the one at Din Tai Fung. The filling is plump and satisfying coated in the smooth wonton skin. The sauce is relatively spicy but not to spicy for those who can't take chilli.



The 'Friend Mini Bread Rolls with  Condensed Milk ($7.90) came a tad early and we left this till last which meant it was cold and not as crispy as it should have been. It was so nice and those two things just go together too well.



Sticky and saucy 'Sweet and Dark Pork Ribs ($19.90)'was a generous serving which was a lot to be shared between three. It was salty and flavoursome and went well with the noodles.



Wasabi. I normally stay away from anything with that word. A convinces me that it tastes nice with 'Seafood Rolls with Wasabi Sauce ($12.90)' and it definitely does. The outside is deep friend and the wasabi sauce is mixed with mayonnaise to give it a lighter flavour. T found this dish to be a bit too oily for her.

We have once again over ordered and stuggle to finish everything. No dessert this time around. The one hour mark reaches and the waiter stares at her watch. We call for the bill and notice that a long line awaits outside in the pouring rain.
